Brushcetta is technically the name of the toasted bread with olive oil & salt, but at our house when we say we're having bruschetta, we're referring to the fresh tomato salad topping. This recipe is our guide for making the tangy tomato toast topping (say that five times fast!)
Start with your favorite tomatoes. Home grown are best, and farmers markets are a close second. Core the tomatoes, halve them & remove the seeds. Next, dice the tomatoes.
3 cups of diced tomatoes
2-3 cloves of minced garlic
1/3c fresh chopped basil
1 tbs balsamic vinegar
1 tsp worcestershire sauce
2 tsp olive oil
1/4 tsp kosher salt
1/4 tsp fresh cracked black pepper
Mix all ingredients and let set a few minutes before serving on freshly toasted french baguette slices. Out of baguette or toast? Hearty crackers work well too.
Another great way to serve the bruschetta is to smear a layer of cream cheese on the toast before topping with the tomato salad. This keeps the bread from getting soggy, and cheese with tomatoes is tasty!
