Fresh Tomato-Basil Bruschetta Recipe

Can you believe its September? Even though schools are back in session and the pools are now closed, our garden is still in full swing. We are getting a lovely crop of tomatoes and one of my favorite ways to eat them is on bruschetta. 

Brushcetta is technically the name of the toasted bread with olive oil & salt, but at our house when we say we're having bruschetta, we're referring to the fresh tomato salad topping. This recipe is our guide for making the tangy tomato toast topping (say that five times fast!)


Start with your favorite tomatoes. Home grown are best, and farmers markets are a close second. Core the tomatoes, halve them & remove the seeds. Next, dice the tomatoes.

Here's the basic recipe:
3 cups of diced tomatoes
2-3 cloves of minced garlic
1/3c fresh chopped basil
1 tbs balsamic vinegar
1 tsp worcestershire sauce
2 tsp olive oil
1/4 tsp kosher salt
1/4 tsp fresh cracked black pepper

Mix all ingredients and let set a few minutes before serving on freshly toasted french baguette slices. Out of baguette or toast? Hearty crackers work well too.

We enjoy tomato-basil bruschetta as a side dish to pasta, or on its own for lunch. When our tomatoes are producing well I almost always have a container of tomato-basil salad next to a container of fresh salsa in the fridge.

Another great way to serve the bruschetta is to smear a layer of cream cheese on the toast before topping with the tomato salad. This keeps the bread from getting soggy, and cheese with tomatoes is tasty!
