Change the World Wednesday- Vegan Recipes

This week the CTWW challenge was to have (at least) one vegan meal. We generally eat 1-2 vegetarian meals a week, so having a vegan meal wasn't too difficult. My favorite this week was altering the Yellow Curry recipe (below). Just remove the chicken, and we added butternut squash and peas. It was wonderful!

I decided to make a round-up of all the vegetarian or vegan recipes on the blog. (Some of them aren't written as vegan meals, but could easily be made into one). Enjoy!
