Shawarma Style Chicken Pita Sandwich Recipe

We’ve been trying to bring some variety our dining room table so today I bring you a variation of a recipe from the Middle East.
This shawarma sauce is an easy way to turn you shredded chicken in to a tasty international dinner.

 This recipe calls for two chicken breasts that have been slow roasted in a crock pot and shredded ahead of time. Another easy option is to shred any leftovers from a rotisserie chicken.

Marinade/Sauce

½ cup Greek Yogurt
2 Tbs tahini (sesame paste)
2 Tbs white or rice wine vinegar
2 cloves garlic  diced
¼ tsp salt
½ tsp black pepper
½ tsp ground cardamom
½ tsp Allspice
1-2 Tbs of lemon juice to taste


Mix the ingredients for the marinade in a bowl. Remove 1/4 c of the mixed sauce and store in an airtight container in the fridge. To the remaining sauce, mix in the shredded chicken. Let the chicken marinade for as little as 10 minutes, or overnight.

When you are ready to cook, heat chicken mix in a pan over medium until the sauce has thickened and chicken is hot.

To serve we use pita bread, garnish with hummus (recipe here), Tzatziki (recipe below), feta cheese, the reserved shawarma sauce and kale. Other good toppings are diced cucumbers and tomatoes, shredded carrots, cabbage, and kalmata olives.


Tzatziki is a wonderful cucumber yogurt sauce, and is simple to make.
You'll need:
1 cup plain Greek yogurt (you can use plain lowfat yogurt, strained)
1 cucumber peeled, seeded, & shredded
1 tbs olive oil
1 tbs lemon juice
1 clove garlic, minced
2 tsp fresh chopped dill
salt & pepper to taste

After shredding the cucumber, give it a good squeeze to remove excess liquid. Mix all ingredients in a bowl and chill for at least 30 min to an hour. This recipe makes enough sauce for one meal, and could easily be doubled.
