Cinnamon Raisin Swirl Pancake Recipe

 GipsonWands is back with another great recipe, this time featuring his breakfast favorite.

As many of you know I love pancakes, and I love making pancakes. There's not much better then settling down to a large stack on a weekend morning. So today I thought I'd share my latest pancake making success-- Cinnamon Raisin Swirl Pancakes.

What you will need-
For the pancakes:
Instant oatmeal
Buttermilk pancake mix

For the swirl:
1 Tablespoon melted butter
1 Tablespoon brown sugar
1/2 teaspoon cinnamon
1/8th teaspoon vanilla extract

For the icing:
1 cup powdered sugar
1/2 Tablespoon butter, melted
1/2 teaspoon vanilla
milk or cream (1 to 2 tablespoons)

Make enough of the pancake mix for two servings, following the directions on the box. In a separate bowl mix the melted butter with the brown sugar, cinnamon, and vanilla extract. In another bowl mix the ingredients for the icing. The ingredients for the swirl and icing can easily be doubled if you are making pancakes for more than two people.

Pre-heat griddle on medium till hot. Pour the pancake batter on the griddle and immediately swirl the brown sugar/butter/cinnamon mixture over the top, add a few raisins and top with instant oatmeal. Then let the pancake cook normally on both sides, one to two minutes on each side. In between pancakes you might want to wipe the griddle off so the left over sugar doesn’t mar the bottom of the next pancake. When done top with icing and enjoy.
