For a 9x13 cobbler you will need:
1/4 cup butter, melted
1/4 cup coconut oil, melted
4 cup fresh peaches, peeled and sliced
2 cup zucchini, peeled, seeded and diced
1 tbs lemon juice
1 cup plus 3 tbs white sugar
1/4 tsp salt
1 tsp baking soda
1 1/4 cup flour
1 tsp ground cinnamon
1/4 tsp ground ginger
1 tsp vanilla
1/2 cup milk
1/2 cup chopped pecans (optional)
Preheat your oven to 350*
Start by cooking cubed zucchini, sprinkled with a little sugar, in a saucepan over medium heat for at 10 minutes. Remove from heat and drain. In a bowl, toss peaches and drained zucchini with 3 tbs sugar and lemon juice. Set aside.
In a separate bowl, combine sugar, salt, soda, flour, spices, and milk. Stir until combined.
Pour melted butter and coconut oil in your 9x13 baking dish. Next, spread the peach zucchini mixture evenly in the dish. Top with the batter, and sprinkle chopped pecans on top, if desired.
Bake 45min at 350* until the top is golden brown.
Allow the cobbler to cool, and serve with a dollop of Greek yogurt, ice cream, or whipped cream. The cobbler makes a great breakfast too. Enjoy!
