Featured Shop of the Week- Stitches & Sparkle

A new week means and new featured shop! I'm happy to introduce this week's shop Stitches & Sparkle, and creator Linda.

https://www.etsy.com/shop/StitchesandSparkle

I decided to start my business and open my Etsy shop after I was laid off from my corporate job. I am a high energy person and needed to be busy while I searched for another job. The "other" job never came along allowing me to spend all of my time developing my Etsy shop which has changed quite a bit as I've grown as an independent business owner.

Peach Zucchini Cobbler Recipe

Are you experiencing an over-abundance of zucchini like many other gardeners this summer? Tired of grilled zucchini and zucchini bread? My answer to those questions is YES! Luckily, I discovered an amazing way to hide zucchini in an amazing dessert, and stretch my stash of fresh peaches-- Peach Zucchini Cobbler.

Zucchini has a light flavor that is adaptable to many applications. At first, you don't think dessert, but it lends a wonderful apple-like texture to the cobbler.

For a 9x13 cobbler you will need:
1/4 cup butter, melted
1/4 cup coconut oil, melted
4 cup fresh peaches, peeled and sliced
2 cup zucchini, peeled, seeded and diced
1 tbs lemon juice
1 cup plus 3 tbs white sugar
1/4 tsp salt
1 tsp baking soda
1 1/4 cup flour
1 tsp ground cinnamon
1/4 tsp ground ginger
1 tsp vanilla
1/2 cup milk
1/2 cup chopped pecans (optional)

Preheat your oven to 350*
Start by cooking cubed zucchini, sprinkled with a little sugar, in a saucepan over medium heat for at 10 minutes. Remove from heat and drain. In a bowl, toss peaches and drained zucchini with 3 tbs sugar and lemon juice. Set aside.

In a separate bowl, combine sugar, salt, soda, flour, spices, and milk. Stir until combined.

Pour melted butter and coconut oil in your 9x13 baking dish. Next, spread the peach zucchini mixture evenly in the dish. Top with the batter, and sprinkle chopped pecans on top, if desired.

Bake 45min at 350* until the top is golden brown.

Allow the cobbler to cool, and serve with a dollop of Greek yogurt, ice cream, or whipped cream. The cobbler makes a great breakfast too. Enjoy!
