Our feature this week is of one busy and talented woman- Katherine, who writes a successful blog, Katherine's Corner, and also owns and creates at Be Well Gifts and Keepsakes by Katherine. Our focus this week is her wedding, home, and style shop Keepsakes by Katherine.

I am an open minded and spiritual person who strives to always maintain a positive attitude and greet each new day with grace, dignity and gratitude. I was born in England on Nov 1st 1960 (I’m a Scorpio) I came to live in the USA in 1975. I currently live in a state where I can see the beautiful mountains from my kitchen window and a lake from my upstairs bedroom window.

Change the World Wednesday Challenge - Ceiling Fan

Two weeks ago someone I follow on Twitter asked, "What are you doing to change the world? #CTWW" I replied, "Shopping Handmade!" After my reply I learned that CTWW stands for Change the World Wednesday, a weekly challenge to do more to to help our environment. What a great idea!

I love that you can jump in at any point of the challenge, and take part in what you can. I like all-inclusive, easy-going communities like that! This week's challenge has been in honor of National Ceiling Fan Day, which took place on Sept. 18th.

We turned our AC off starting Sept 19th (yes, we were a bit late) and have left it off all week. The weather has been nice, which helped, but a few days I did miss the AC. Instead, we used our ceiling & box fans to stay cool.

One easy way to keep the house cool if we know it will get hot later, we open all the windows in the early morning and cool the house down. As the day warms up, we shut the blinds & windows getting a lot of sunlight. By the late afternoon, we have all the blinds of the south & west facing windows shut. It helps reduce the heat a lot!

Thai Sticky Chicken & Garlic Green Beans Recipe

As you may have figured by now, we love Asian-inspired food. We've looked around the internet and found a few recipes to try, and today we're sharing our favorite Thai Sticky Chicken recipe, plus a side of Garlic Green Beans (below).

Just like the Orange Chicken this is for an easy sauce that you coat chicken nuggets (or chicken fries as shown in the photo, since we were out of nuggets). It can easily be adapted to cover cooked chicken breast pieces too! You’ll want to start the rice & chicken nuggets just like the last one and start the sauce on the stove top. You can follow the same Fried Rice recipe from the Orange Chicken post.

Easy Mongolian Beef Recipe

GipsonWands brings us another great post, this time a recipe for Mongolian Beef.

My wife and I bought a family pack of KC strips the other day and after having a lovely steak dinner we had only one steak left. So how do you make one steak in to another meal? The answer is Mongolian Beef.  This recipe is fairly easy and tastes great served over fried rice, with steamed vegetables on the side. The recipe below serves 2, but can easily be increased to serve more.

First, take the steak (our steak was 12oz) and cut it into thin strips on the bias. Here I’m using a KC strip but flank steak also works well. Cut the steak at a 45 degree angle so the strips are wide, and remember thinner is better. Once you get the steak sliced, combine it in a bowl with 1 tablespoon cornstarch and toss to give an even coat to all pieces, then let it sit while you make the sauce. Now would be a good time to start the rice too.

Handsewn Posey Flower Tutorial

September is National Sewing month, and in honor of it I have put together an easy tutorial on how to handsew a posey flower. These flowers can be used as hair accessories, lapel pins, to adorn bags, or make a bunch for a never-wilting flower arrangement!

Start out with enough fabric to cut out 6 circles of equal size. I used 3" circles, but any size would work.
Start by folding your first circle in half, as shown below.
